Foodie Friday: Baked Sweet Potato Fries

I love fries! Wait, I’m obsessed with fries! One problem though… they ain’t so healthy. So when I discovered baked sweet potato fries I was ecstatic. For starters they baked, not fried, secondly they healthier and lower in calories and thirdly they so simple to make.

I made myself some baked sweet potato fries the other night along with some homemade guacamole and added a twist to my mayo and sat down to enjoy a movie. A perfect night in along.

Prep time: 5min
Cooking time: 20min-30min
Total time: 25min-35min
Calories: 122, without sauces. 


For the Sweet Potato Fries:
2 large sweet potatoes
2 Tbs olive oil
1/4 tsp of each: salt, paprika, cheyenne pepper, cinnamon
1/8 tsp pepper
1/2 sugar

For the guacamole: 
1 avocado
1 lemon/lime
1/4 cup chopped onion
1/4 cup chopped tomatoes
Salt and pepper

For the mayo:
** I only made a small amount of this mayo to keep this dish healthy. You can always make more.**
3 Tbs mayo
1 clove chopped garlic
Salt and pepper

1.) Preheat the oven to 450 degrees celsius.

2.) Wash and dry the sweet potatoes and then proceed to cut them to your desired size. (I like to cut mine a little thicker then french fries but not too thick. They get more crispy when they thinner.)

3.) Place your cut potatoes in a large mixing bowl and coat them with the olive oil. Make sure all your chopped potatoes are well coated. Add more olive oil if there isn’t enough.

4.) In a small bowl mix all your seasonings together.

5.) Sprinkle the seasoning on your potatoes and mix well.

6.) Spread your chopped potato pieces in a single layer on a baking sheet on a baking tray.

7.) Bake for 10min then remove and turn them over. Bake for another 10min.

8.) While your fries are busy baking mix together your mayo, chopped garlic, salt, pepper and a squeeze of lemon juice. (This tastes so good!)

9.) For your guacamole roughly mash up your avocado using a fork. (I like my guacamole to still be a little chunky, I don’t like it too smooth.) Then add your chopped onion and tomato. Mix together. Now squeeze in your desired amount of lemon/lime juice and some salt and pepper.

10.) Once your fries are done, I like mine golden brown, remove from oven and sprinkle with some salt and pepper if desired. (If you want your fries crispier cook them for an additional 5-10min)


Brooklyn Bridge

Last week Justin and I woke up at 4am to be on Brooklyn Bridge as the sun rose to shoot this post. There was something so magical about being up in New York City so early in the morning before all the hooters and shouting started.

Usually Brooklyn Bridge is over crowed with people transiting from Manhattan to Brooklyn or tourists with their cameras but that morning we had the beautiful majestic architecture all to ourselves.

The day was overcast but still warm, a perfect day to wear my melange midi dress from Woolworths. A simple outfit for the days wanderlust adventures.

It’s all about the little details when you wearing something as simple as below. A hat and a little bit of jewellery can go a long way with adding a little interest to a simple item of clothing.

I’m also obsessed with ankle boots. I believe every girl should own a brown and a black pair of ankle boots. Don’t you agree?

Moody Blooms

Greetings from New York City! I can’t even begin to explain what an amazing place this city is. Within two hours of arriving I had fallen in love.

Hence the reason for being so quiet on the blog the past couple of days. I’ve been walking the streets like crazy taking every little inch in. I’ve been tracking my walking and it’s sitting on 25-30km a day!

Got so much travel stories and tips to share with you all, can’t wait. But for now here’s a look post we shot before we left South Africa.

Cape Town looks like it’s been freezing and one of the best things to wear when it’s cold is a chunky knit. I suggest Country Road, they have a rather large knitwear collection that I am absolutely gaga for. I can’t walk into CR without buying a new knit.

Instead of wearing a beanie this Winter try teaming your outfit with a veldt hat like below.
